Light Fruity Yogurt Dessert

By Penelope Karagouni – Athens, Greece

A wonderful, healthy, and very impressive dessert that will cool you down on hot summer days, and is great for many other occasions and seasons too!

Ingredients:

1 5-serving package or 4 oz./100 grams of strawberry flavored gelatin

Boiling water according to the instructions on the package

7 oz./200 grams strawberries cut into small pieces

16 oz./450 grams plain Greek yogurt of your choice

4 tbsp. powdered or icing sugar

Whole strawberries for garnish

Directions:

Dissolve the gelatin in the water and divide the mixture into tall wine glasses. Carefully place the glasses in the refrigerator so that they lean at an angle. This will allow the gelatin to thicken in an inclined position. Support the glasses so that there is no risk of them falling when you open the refrigerator.

Allow the gelatin to thicken well for a few hours.

In a bowl, mix the powdered or icing sugar with the yogurt and add the strawberries. Mix well. Take the glasses with the gelatin out of the refrigerator and carefully fill them with the yogurt mixture.

Cut a strawberry into thin slices without cutting off the stem and open the slices carefully as you would open a fan. Put a strawberry in each glass and put the glasses back in the refrigerator.

You can serve the dessert immediately or leave it for an hour so as all the flavors blend together.

Tips:

Instead of strawberries, you can use another fruit of your choice, such as pineapple, cherries, apricots, bananas, or berries, and use the matching flavour of gelatin.
