This is my grandmother’s very old and delicious recipe for butter cookies, which you can make with your children! The secret to their success is to use a very good quality butter.
Ingredients for the cookies:
320 gr/11.28 oz clarified butter or Ghee
320 gr/11.28 oz powdered/icing sugar
4 yolks from small eggs
640 gr/22.57 oz flour for all uses
1 tbsp brandy
1 teaspoon vanilla extract
Ingredients for the icing:
½ cup powdered/icing sugar
½ teaspoon water
Food coloring
Method:
Beat the butter with the powdered/icing sugar until the mixture becomes fluffy and then add the yolks one by one.
Beat the mixture for a while and then turn off the mixer. Add the brandy, vanilla, and flour minus half a cup.
Mix gently with your hands to form a firm dough that can be shaped. If the dough still sticks to your hands when you shape it, add the rest of the flour.
Roll out the dough with a rolling pin and cut out the cookies with cookie cutters of your choice. If you do not have any, you can use the rim of a small glass.
Cut a piece of parchment paper to fit the bottom of a baking tray, and place the cookies on top. Although the recipe does not contain baking powder or soda, the cookies spread out, so leave a small space between them.
Bake the cookies at 180 ° C /356 ° F for 20-25 minutes on the conventional setting (not using the fan).
Be careful not to overcook the cookies. They should turn a slightly beige color like the Scottish shortbread butter cookies, so do not let them turn golden brown or they will burn. When you take them out of the oven, they are still soft and can easily break. However, once they cool, they harden.
This recipe yields three baking trays of cookies.
You can eat them as they are or covered with sugar icing. The kids will look forward to painting them!
For the icing, mix about half a cup of powdered sugar with a teaspoon of water and stir. If the icing is too thick, add a little more water. Divide it into as many plates as the colors you want to make, and add a drop of food coloring to each one. Mix well. With a paintbrush, start painting your cookies and let them dry before putting them in a box or on top of each other!
